人民麵包店 - Paris Baguette



韓國最大的連鎖麵包店 Paris Baguette (PB)本月在新加坡烏節路的 Wisma Atria 開張了,原址的鼎泰豐則搬到樓上擴大營業。由於位置就在大門入口處,嶄新的裝潢和令人垂涎欲滴的賣相,每次經過都是大排長龍,座無虛席。在許小臉生日的那天,我們一大早就出門,總算能拿到一個沙發位。

Paris Baguette 在韓國的定位是大眾消費,全國有3000家以上的加盟店,質量並不穩定,價格也並不統一。部分位於市中心兼賣咖啡的店面,價錢會稍高個10-20%。住在韓國的時候,我不常去那裡買麵包,因為它的品質真的非常普通(跟台灣便利商店的麵包差不多),蛋糕也不怎麼好吃。

在新加坡,Paris Baguette 的品質、定價,走的是精品路線,蛋糕約 7.5~9新幣,麵包約2新幣起跳,一個可頌2.5 (約台幣60元,PAUL的價位),約10公分長的"漢南洞熱狗"麵包3.6(約台幣90元)。出了國門,價錢變高,品質變優,採用的卡士達餡料都是看得到香草顆粒的原汁原味。

我要寫的不是食記,我照相技術那麼爛,也沒有明報旅遊記者的文筆。我其實在想,如果韓國的PB也是這樣的高檔路線,開一家PB就不會那麼容易,它不會是"人民的麵包店",在首爾,每隔幾個街口就有一家。

麵包是保存容易、食用容易、變化多端、又有飽足感的食物,繁忙的都市生活裡,麵包店處處可見,這是PB興起的背景因素之一;近年來,越來越多PB加盟店轉型為Paris Baguette Cafe,擺上幾個小桌子,兼賣咖啡,售價比一般咖啡店低個3成,擴大客源。

至於這些咖啡店誰來開? 出生於戰後嬰兒潮的退休中年人正可填補這個龐大的需求。韓國的中年人退休後若不繼續工作,生活便無以為繼,加上階級觀念嚴重,韓國很多中產不願意為人打工,寧願自己開業,連鎖麵包店、便利商店、咖啡店、電信門市、補習班("學院"),這些經營風險、進入難度及門檻相對低的行業,雨後春筍般興起。PB便是其中最經典的一個例子,準備個一、兩億韓圜,就可以開個有點檔次的 Paris Baguette,規畫得好,2、3年差不多可以回本。

我常覺得,戰後創造了 "漢江奇蹟" 的 baby boomers,韓國"80後"的父母那輩,真的... 很倒楣。他們多數出身貧困,苦了大半輩子,胼手胝足的建立了豐衣足食的社會之後,卻養出一堆敗家子。很多人看韓國人外表光鮮亮麗,其實多數家庭舉債累累,年輕力壯的時候,要買房、買車、負擔小孩的教育經費,步入中年,好不容易把孩子養到大學,他們要出國遊學、買名牌包、買衣服、要拍拖,誰買單? 爸媽買單。大學畢業以後要成家,誰買房誰買車? 當然還是靠爸啊! 這樣子的世道,前債未平,後債又起,養的這些80後還在哺乳期匍匐,你說,他們退休後還能夠安寧嗎?

開Paris Baguette已是許多退休中年人的熱門選擇之一,我在韓國時也聽過哪個親戚打算投資2億韓圜在哪個好地段開店等等。Paris Baguette的店面經常可以看到老闆的身影,作為中產階級的他們,行頭看起來多少有點氣派,但是我彷彿能看到,他們這頭忙乎,另一頭的子女,可能都快30了還在學校窩著,不然就是沒工作還要每天一杯星巴克。

有些人喜歡談韓國威脅論,唱衰台灣。我倒不這麼想。台幣35元只能買最普通的一個PB的麵包,在台灣卻可以買一碗麵,可是你可以經常看到,在台灣的麵店,孩子在幫著清桌子或招呼客人。

不是每個韓國年輕人畢業都可以來個七、八萬台幣的薪水,大多數的可能就是100來萬或88萬,但眼高手低的寧願在家蹲著,也不願意領88萬(台幣25K);在台灣,很多年輕人拿著碩士學歷,22K也甘願做。我不覺得"甘為資方奴"的22K碩士有什麼好可憐的,好被批評的,比起寧願在家蹲著也不要拿88萬的韓國80後,他們身上才看得到希望。這個差別,20年後可能就會很清楚了。

回到 Paris Baguette。它是人民的麵包店,不單因為它的招牌出現在大街小巷;它的興盛與存在,和當代韓國是那麼的緊密連結著。它著實是人民的麵包店。

21世紀韓勞流

我其實是一個很喜歡爆卦的人。無奈人越老變得越保守,只好敝帚自珍XD
但是呢,做我這行的人畢竟有種專長,就是把八卦、偏見這一類的東西包裝成學問。所以,所謂的好學之人,往往也是很八卦的人。這也就是為什麼我們系上的人,不論男女,聚餐都能聚到半夜之謂也。


周末經過烏節路伊勢丹 (Isetan) 百貨,看到原是門庭若市的鼎泰豐的位置,已被韓國麵包連鎖Paris Baguette取代。許小臉說,難怪最近聽到他們公司(某韓國銀行)的韓國員工在討論PB在新加坡招人的消息。

受到PB鳩佔鵲巢的刺激,我想聊一下21世紀的"韓勞流"。



上個世紀之前的韓勞流,成因和19世紀以降前往美澳的歐勞、華勞類似,21世紀的韓勞流則非如此。我認為有2個主要成因。
一是中產階級因感韓國生活壓力大,而舉家外移;這些中產父母沒有金庫,到了國外自然得勞動以維持生計,有些是自己做點小生意、開餐館,有些則是幫人打工。提到幫人打工,便和這第二個成因密不可分,那就是韓國企業的海外擴張。

韓國政府鼓勵企業擴張海外市場,一方面有民族主義的因素,主要則是經濟情勢所趨。韓國雖然風光的進入20-50俱樂部,但人口不到日本一半,內需市場成長有限,不擴張海外市場,最終便會坐以待斃,畢竟它可不像台灣;台灣仗著語言文化的優勢,睡個懶覺起來,還有西邊的半壁江山可以慢慢賞玩。

因此,韓國舉國上下,科技、工程、文化、美容、餐飲、時尚等,為了海外擴張,可是卯足全力。韓國在海外已有相當成就的領域主要在科技、工程、物流,科技和物流不用多說,在工程方面,韓商早已走遍全亞洲,特別是在新加坡,到處都可以看到韓國建商的工地,如GS E&C、現代、雙龍等;新加坡的 Marina Bay Sands (金沙酒店) 即是雙龍建設承建。軟實力方面,那些韓星韓劇啦大家都知道,較不出名但正在慢慢滲透的是進行已久的韓餐全球化,其它還有瑣瑣碎碎沒有特定niche market的生意,例如Paris Baguette。如果PB能夠成功,充其量就是因為新加坡的麵包太難吃了,END。

韓企不斷進行海外擴張,在語言文化上和當地居民有所隔閡,相應產生了一定的海外韓人的就業市場;由於一般高階職務皆由韓國外派員工擔任,在當地開出的職位便屬於基層職務。那些因各種因素滯留海外的韓國人,剛好可以填補這些空缺。可別小看這些空缺,現在韓國青年人失業狀況也不是開玩笑的,很多年輕人甚至特地從韓國過來卡這些位。

拿新加坡為來解釋比較快。這些缺可以分兩種,一種是一般的office job,可以吸引在韓國考不上好大學所以跑到新加坡念一些有的沒的的學校的畢業生,這些人家庭背景還算OK,所以在新加坡僅管念的也不是啥正規學校,一般韓企也會願意接受。附帶一提,這些人回到韓國自然是沒有競爭力的,也剛好因為新加坡總是有這些需要韓籍員工的韓企,他們可以在新加坡安安穩穩過小日子 - 許小臉辦公室的 local hire多是屬於這種例子。當然,講到這裡為止,都是在"企業"的階級,新加坡還有很多小型韓國公司,是專門依附在"韓企"的生意之下,例如為韓國海運公司提供物資的公司,他們每天的工作內容就是幫船員們準備船上要用的盥洗用具、衣物等,一語蔽之,就是"打雜"。我認識的一個韓國女生,中文系畢業連句中文都說不出口,人生就是在打混,都已經快30了,還是不願意面對現實,於是從韓國跑到新加坡來"打雜",每個月一千塊新幣,話說,在韓國都已經很難找到新幣1千塊的工了,她還願意到新加坡打這種工,就是因為一到了國外,要怎麼跟家鄉父老吹都可以,總比待在韓國承受別人的歧視眼光來得強。所謂第二種缺,這個就比較敏感了,洗錢啦卡拉OK啦那一類的,可以自己想想啦。

21世紀的韓勞流,形成原因和前幾個世紀不同,並非出自於原鄉推力。20世紀的漢江奇蹟奠定了韓人得以出國發展的經濟基礎,不管是做小生意還是去讀書,都是出自自我意願。選擇移居國外的韓國中產家庭為海外韓企提供了勞力來源,同時,不斷進行海外擴張的韓企亦製造了海外韓人就業市場,兩者相輔相成,造就了21世紀的"韓勞流"。

食客天下

在新加坡韓人圈裡很紅的食客(식객)自助韓國BBQ在韓人雲集的Tanjong Pagar發家,繼而在另一個韓人聚落Novena開了2號店。有別於要排隊的1號店,2號店生意平平,就算是周末假日,都不見得能坐滿一半。大概是意識到了韓人市場的飽和,食客2011年底在中國城附近開了3號店。打入中國城的華人市場是非常成功的策略。目前中國城的自助餐廳多是屬於重慶麻辣鍋、東北涮涮鍋之類的餐廳,少有食客這樣的自助式燒烤;在環境的舒適度,也大勝擁擠嘈雜、要坐到馬路邊上的中國火鍋店。

坐位舒適。韓國餐廳比較大氣,店內一般都是設置4人座,不管你是一個人來還是4個人來,都能使用一樣的空間。這點我蠻欣賞的。

肉品區。有醃漬過的肉品,也有原味的肉品。

海鮮、蔬菜、沙拉。

介紹三層肉醬料的調製方法。

白飯和湯類。我去的那天的泡菜湯 ( "김치찌개",gimchi jjigae,下圖)煮得不好,看顏色就知道不對勁。

熟食區有三種食品 : 烤肉、煎餅、還有中式蒸肉。
那個中式蒸肉(左下)比我預料中的好吃很多耶!

冷飲區。這個是之前兩家食客都沒有的(科科,不過我也不喝這些東西啦,沒差~)

食客3多了一個"Action Station"展示台,特定時段會有一個韓國小妹在那裡包紫菜捲和fusion口味的牛肉捲餅 (bulgogi burrito)。

烤肉實況。順序是從沒有醃漬過的烤起。第二張圖是三層肉,我們拿來跟泡菜一起烤,自製泡菜三層肉;我很想加芝麻油和辣椒醬一起烤,但許小臉只愛吃原味泡菜烤出來的,他說這樣比較正宗~


比起食客1號店和2號店,3號店的環境、交通、和食品方面都進步很多。雖然沒有另兩家有的韓國素麵 ( "잔치국수", Janchi Guksu) 和 "食醯"  ("식혜",Sikhye, 一種米釀成的飲料),泡菜湯也煮得不好,整體上來說,還是食客3大勝。

IU的寧靜舞台

My Little Lover 的 "Hello, Again ~昔からある場所~ "是十多年前聽到便過耳不忘的歌,那不是一個五色令人目盲、五音令人耳聾的年代,akko穿著再簡單不過的洋裝,便可讓全場屏氣凝神。

其他風格的流行樂手,hitomi (我最喜歡的 >"<)、倉木麻衣、或是大吵大鬧的相川七瀬都可以靠一支麥克風撐起全場。因為只有音樂,他們的舞台,很寧靜。

現在傳媒的形式多了,流行音樂的內容也有所改變,聽覺和視覺高度結合,歌唱得好已不足夠,還要扭腰擺臀來吸引觀眾。這個現象在韓國尤其明顯,國民妹妹IU(아이유),雖是個實力派唱將,也逃不了唱口水歌穿高跟鞋載歌載舞;前SES的Bada那個才叫慘,年紀都有一把了,還要比照少女團體跳成這樣,不忍卒睹之餘,讓人有種淡淡的憂傷。

只有音樂的寧靜舞台在韓國越來越少(事實上我想不出只唱歌的韓國女歌手了),但在日本樂壇卻依然存在;中島美嘉、木村カエラ不管打扮得多龐克,只要握著麥克風不放,就能用聲音牽動每個人的情緒,年紀輕輕的YUI穿著 T shirt牛仔褲步上舞台,小口一張,人們目不轉睛。

日本音樂市場的這個特色,被IU的公司認為是最適合讓IU成功進入日本樂壇的方法 - IU的日本出道showcase選在Bunkamura Orchard Hall舉行,這是一個以藝文表演為主的場地,伴樂則為東京New City管弦樂團 - 自始,就要將IU定位成可以靠一隻麥撐下全場的歌手。我很難得看到韓國歌手以這樣的面貌出現,純粹而寧靜。

South Korean's Nanyang Dream - Probably a Beautiful Mistake

We are witnessing a gradual increase of Korean population in Singapore. Not that Singapore is such a fantastic place that replaces Korean's most admired migration destinations such as the US, Canada, and Australia, but because it's an affordable choice (just like Korean apples in Singapore). 
Especially for the less elitist in the Korean society, Singapore is the best destination for their education pursuit; 2 choices are before them - entering a 100th ranking university in Korea or enrolling in a unknown private institution in Singapore and come back with some English ability and an overseas degree. Cost of living in both countries is about the same (even Singapore is slightly cheaper than Seoul) and tuition fee is not even a concern - in Korea it is roughly 10M Korean won (for private university, which is the majority) and Singapore SG$17000 per annum. What further narrows the gap is that in Korea a bachelor degree requires 4 years of study which amounts to a total of 48K in SGD, whereas a degree in Singapore takes only 3 years, costing 51K SGD.
These facts are what make Korean population a discernible existence in Singapore, and that the similar trend is not observed (like in the Euro American countries) among people from adjacent, equally developed countries such as HK and Taiwan.
But is coming to Singapore, really a smart (스마트) choice for the Koreans? I do not think a lot of them expect to stay in Singapore for good, as the career prospect for Koreans in Singapore is just nothing. Going home is the answer, but their education in Singapore probably does not give them any competitive edge upon returning.
In the end, their Nanyang dream is probably just a beautiful mistake.

新加坡到處都是韓國人。

當然不是因為新加坡已經讚到取代韓國人的熱門移民國家如美、加、澳,而是因為它的入門門檻低。

對於許多韓國的非菁英階層而言,教育上他們進不了韓國名門大學,經濟上無法負擔移民歐美,新加坡燃起了他們的希望 - 與其讀間排名要翻到第N頁的大學,倒不如去新加坡念個私人教育機構,可以學點英文,回到韓國還可聲稱自己有洋學歷(南洋也是個洋啦)。

花費上也不見得高出多少。兩國消費水準差不多,首爾地區甚至比新加坡高;學費亦不相上下,韓國私立大學(韓國大學不論排名前後一般是私立的)年約1000萬韓幣(12K新幣),4年制,新加坡私人教育機構約17K新幣,3年制 - 48K vs. 51 K, 簡直可說零差距。

這些因素造就"在新韓人"這個社群的出現,而這個現象之所以特殊,是因為我們無法看到周邊發展程度相似的國家,如香港或台灣,有展現此等趨勢,不像在歐美,我們可以找到韓國社群、日本社群、香港社群、台灣社群等。

在韓國,越來越多人在做著這個南洋美夢。可這真是個 smart (스마트) 的選擇嗎(韓國人很愛用 smart 這個外來文XD) ? 當這些韓國學生畢業後,他們發現這些私人機構的學歷無法提供他們在新加坡的就業前景,也無法提升他們在韓國的競爭力。對很多人來說,來到新加坡,終是一場美麗的錯誤。

Another White Man Admiration (另一種白人崇拜)

In Asia there's white man admiration.

In Singapore, their white man admiration includes... Korean. As Singaporeans are already too familiar with Caucasian presence, their white man admiration has already, largely, transferred to Korean.

All that Hallyu stars and melo dramas add to the Korean popularity, making people fantasize with tall and cool Korean handsome man, romantic winter scenery in Korea, leggy girl groups that represent fashion, and the mysterious and macho sounding Korean language.

Korean products, at the same time, are being portrayed as safe and elite delicacies - from strawberries, eggs(!), apples, to tomatoes(!!!).

You might attribute to the success of Korean government's cultural or agricultural export policy, but... not quite, as this alone is insufficient in explaining why the same phenomenon is not witnessed to the same extent in other developed Asian countries like Taiwan or Hong Kong.

It seems that Singaporean locals, with their average shorter body and darker skin, are looking up to Korean who are supposedly with taller figure and fairer complexion, just like how they used to view the civilized Caucasian.

Why is it so? It's just an aspect of human society, that people tend to look up to an idol existence. So yesterday it could be Caucasian, today it can be Korean, and tomorrow it will be something else. Duh, I hope I don't sound like racist.



在亞洲大家崇拜白人。

在新加坡,這個白人崇拜的對象還包括...韓國人。也許新加坡對正宗白人過於熟悉,崇拜對象轉移到了陌生的韓國 - 這個國家,有著浪漫白色耶誕節、高大英挺的男人、長腿時尚正妹、及神秘又具男子氣概的韓文。

崇拜的具體內容除了那些韓流明星、韓劇、韓國草莓、韓國雞蛋(這很扯,我之前寫過),最近我還發現,連韓國小番茄都上榜惹!!!

完全歸功於韓國政府的文化/農業/高科技產品出口政策並不夠,因為這無法解釋,為何在台灣或香港這樣類似發展檔次的地方,無法見到新加坡這種程度的韓國崇拜。

有時我總感覺,這些相較矮小黝黑的本地人,是仰著頭在崇拜著那些皮膚白皙身材高大的韓國人,正同他們過去景仰歐美白人一樣。

也許可以這樣理解,這種崇拜是出自於人性的崇拜本能,人們總能找到一些可供崇拜的存在;過去是白人,現在是韓國人,以後當然還會有別人。

"Chopping Play" - Korean Contemporary Art Now

This week I visited Chopping Play @ ION Orchard, featuring 6 contemporary Korean artists: Gwon Osang, Shin Kiwoun, Son Donghyun, Yee Sookyung, Chung Suejin, and Chun Sungmyung. (All photos taken @ ION were under permission from ION staff; courtesy of AndrewShire Gallery in Singapore)

Gwon Osang's work plays with dimensions. He takes photos (2 dimension) of a subject (3 dimension), and overlays them back to real size light mannequins, through which he transforms the 2 dimension photos back to the 3 dimension object again, creating an effect both surreal and realistic. This concept does not appear that fascinating to me, however, since it's my first time encountering this style, it feels refreshing and interesting. Check here for more of Gwon's work.

Chung Suejin's "untitled" is an interesting piece, since it's untitled, I need not say much. But I do enjoy the Koreanness in her work. Look at the faces, who else can they be?

Also noteworthy is Son Donghyun, who's said to be good at using traditional painting techniques to portray modern mass cultural pop icons. A seemingly contradiction lies in the concept of using traditional painting techniques supposed to only serve the upper class in the past to portray pop icons. May take a look at his KING series featuring Michael Jackson too.

Another noteworthy one is Chun Sungmyung, coz he's just such a creepy guy. It doesn't make me feel all that comfortable putting his work here, so I just select one that looks healthier (well, the whole concept of his art work is about un-healthiness actually).

Well, this exhibition aroused my interest in contemporary Korean artists. When I go back Seoul this Friday (YAY!), let's see what I can find there!

Rich Apple, Poor Apple? No, it's Affordable Korean Apple


Sometimes popular things are not popular solely because they are superior. Same reasoning applies to the popularity of Korean products in Singapore, why? Though they are superior to products of this region (South East Asia), a lot of times they still lose competitive edge to Japanese products in terms of quality. Let's say, you buy apples of Chinese, American, or Italian origin, which are priced around 5 for $2, and once in a while you wouldn't mind trying Korean apple that is $1.2 for one but double the size of the cheap ones. But it's very unlikely that you would shift your expectation of the price of an apple to $3-$5 or higher and go for a Japanese apple on a regular basis. So a possible explanation for the high visibility of Korean products("Korean Fashion", "Korean Accessories", etc) in Singapore is not because they are the best, but that they are affordable luxury.

Unanimously, electrical retailers island wide love to repeatedly play Girls' Generation's Oh! and Gee, and once in a while Goto Maki's Some Boys! Touch, on their LCD products. I strongly recommend that you click on the songs' links to view these MVs. I guess the stores understand that nothing can be more eye catching than young hotties in their shorts shortest ever shaking boobs and butts.

Hey you know Singapore is still Asia, nothing wrong about women being eyed by men. But there's still some discretion; at least they don't produce, they just consume. It's Korea that produces and performs. For those gender-sensitive readers, I know you get what I mean.


最近經過這裡的家電部門,一排排電視連續又重複播放的老是Girls' Generation的Oh!Gee,有時是後藤真希的Some Boys! Touch (拜託,這已經是4年多前的老歌了耶)。大概他們也知道,貝齒美目的少女們穿著短得不能再短的褲子扭腰擺臀,還有比這回頭率更高的嗎。新加坡畢竟是亞洲,女人給男人看,沒什麼不對。不過此間還是有點差別,新加坡只算個消費者,製造商可是韓國啊。對性別議題敏感的人,知道我什麼意思吧(眨)。

Etude House in Singapore - Doomed to Go Back Home?

Obviously, things Korean are considered of good quality and fashionable in Singapore. However, I don't see this fact a justifiable reasoning behind such overpricing of Korean products. A Etude House nail polish worth 3000 won, SGD$3.5, is priced at almost SGD$12. Not just that, products on sale in Singapore are even things already taken off the shelves in Korea. Now you guess where their inventory goes! Same situation applies to other brands like the Face Shop, and other locations, such as Taiwan.

Etude House just opened its first store in Singapore last year, which means consumers are yet to be familiar with this brand. Sooner or later they'll realize, for the similar price as The Body Shop's, Etude House products underperform to a great deal. And the worse thing is that, hey, they are buying Korean people's leftovers! When this day comes, Etude House is doomed to wave good-bye.

韓貨在新加坡是有種時尚且品質優良的形象,但也不代表可以賣比韓國售價高2~5倍、且早就下架的過季品給人家吧! 這樣搞的還有The Face Shop,賣的也是不知道韓國哪年的過季品。我在Etude House裡看到一款指甲油(而且已經油水分離了),和我半年前在首爾買的完全一樣,當時大清倉50% off,所以我以1500 won入手。它的原價是3000 won,大概才3.5新幣,在這裡卻賣到近12新幣,是當O.P.I. 賣嗎! 拜託,那指甲油慢乾、不易塗勻,50% off我都嫌貴。賣到12新幣,我只能說是良心事業啊!

Etude House去年才進入新加坡市場,消費者尚未有足夠時間去熟悉這個品牌,再過些時候,他們將會意識到,自己以和The Body Shop差不多的價錢買Etude House,卻只能享受充滿人工香料且表現遠差一截的產品。到時就算有哪位韓星代言,也無濟於事。話說回來,從頭到尾,我都不理解這些韓國品牌在國外的市場區隔在做什麼!

Feeling like "The Other"

Every day I see Korean people in here, and whenever they pass me by, I just couldn't help but turn my head and stare at them a few more seconds. Not that I feel any affinity with Korean people, but just there is some empathy down my throat. I know they probably are having the feeling that I used to have when I was in Seoul, that is, being "The Other". This somehow can be depressing, especially when one has an intention to stay in that very place for a longer period of time, or even a whole lifetime. There was a time when I had no where to channel my depression living in Seoul, so I was always acting like crazy; this lasted for several months, until I realized my problems lied not in Seoul or Korea or me or discrimination in general, but my expectation, that I expected to feel dignity, but as an "Other", I was instead entitled to mostly disgrace. Maybe, that is basically why people group, because they wanna create a space entirely of their own, where they are no longer the Other, but the Subject
